   Staff personal hygiene

Humans have a range of bacteria in their bodies – some are harmless, while others can lead to serious illness if they come into contact with food which humans then consume. This makes poor personal hygiene one of the major factors leading to food becoming contaminated with disease-causing bacteria.

An investigation of ice cream shops in central Copenhagen found large quantities of bacteria in 40 per cent of the ice-cream cones. The bacteria came from human faeces, and had ended up in ice creams because employees had not washed their hands thoroughly enough after going to the toilet.
